No-fuss, low-fat cooking has never been easier. The ribs that radiate from the center of this grill pan hold the food above fat and other liquids that accumulate during cooking. The base of the pan is subtly sloped--higher at the center and lower at the edges--to drain grease and fat to the sides for easy removal from one of the two pouring lips. Its heavy-duty aluminum construction makes this one sturdy pan; even the stainless-steel stay-cool handle is securely riveted in place.The special materials used in this pan make it a bit finicky. The manufacturer suggests cooking over medium heat at the highest; the grill pan conducts heat well but will require a few minutes of preheating, especially for searing meats. The pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. You can slip the pan without the lid into the oven up to 390 degrees F; the lid can only withstand 325 degrees F.
