The champ is waging an all-out war on fat with an ever-expanding line of cookware that works to chase away as much fat as possible. This hard anodized grill pan has a nonstick surface, so you don't need to use as much oil or butter while cooking. In addition, the high ribs that radiate from the pan's center hold foods above any fat created during the cooking process. The pan's sloping surface, higher in the center and lower at the edges, draws the pooled fat away, and pouring spouts on both sides of the pan enable you to drain it with ease.The special materials used in this pan make it a bit finicky. The manufacturer suggests not exceeding medium heat; the grill pan conducts heat well but will require a few minutes of preheating, especially for searing meats. Also, the pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. You can slip the pan without the lid into the oven up to 390 degrees F; the lid can only withstand 325 degrees F. This pan is not recommended for the dishwasher, so count on washing it by hand with hot, soapy water. --Cynthia Nims
