This pan goes all-out in the fight against fat. The heavy-duty hard anodized surface provides great durability, and the nonstick interior means you can use a minimum of added fat. Ribs radiate from the center of the pan, holding the food above any fat or other liquids that accumulate during cooking. And finally, the patented ring design provides a channel around the edge of the pan, making it easy to pour off fat even while cooking. Just tilt the pan to catch the fat in the channel; continue tilting in a circular motion to draw the fat upward to the pouring lip for easy removal.

The special materials used in this pan make it a bit finicky. The manufacturer suggests cooking over medium heat at the highest; the grill pan conducts heat well but will require a few minutes of preheating, especially for searing meats. The pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. It's not recommended for the dishwasher, so count on washing it by hand with hot, soapy water. --Cynthia Nims
