Editorial Review:
Santoku means three good things . This refers to the three skills easily mastered with this Santoku knife: slicing, dicing and mincing. Part of Calphalon s Contemporary Stainless Cutlery series, the knife combines elements of a chef s knife and a cleaver to create one all-purpose knife. Indentations along the blade s edge - known as kullens - reduce friction and prevent food from sticking.
Sleek and attractive, this 7-inch Contemporary Stainless-Steel santoku knife from Calphalon complements the most contemporary kitchens, easily blending in with stainless-steel appliances and accessories. Translated as "three good things", the santoku knife is equally suited to slice, dice, and mince. Just as versatile as the chef's knife, this Asian-style blade combines the dexterity and strength of a cleaver and chef's knife into one.
Constructed from one piece of high-carbon, stain-resistant, German steel, this knife is individually balanced increasing the comfort, efficiency, and strength. The blade has been hand ground to achieve maximum sharpness and designed with kulles, indentions along the blade edge that are specific to the santoku knife. These reduce the friction and prevent food from clinging to the blade. The solid steel handle is contoured to fit all hands, and slightly textured to enhance the grip. Calphalon offers a lifetime warranty, recommends washing all knives by hand, and suggests always storing cutlery sets in the appropriate storage location. --Lea Werbel

Quality is great, but not comfortable for lots of chopping; also, heavy:
I'm generally really pleased with this knife: the blade holds an edge well, and it's very well-balanced. It's heavy enough to use in cleaver-type applications, but not too heavy as to cause fatigue (even in my very small hands). My main complaint about this knife is that I tend to blister if I use it for real heavy prep work (I cook and prep--no shortcuts--a lot). This doesn't happen with my traditional chef's knife. I don't know why this is the case (the blister occurs where my fingers grip the... more info
Versatile and Quality:
I have the entire "Contemporary" Series set from Calphalon. The Santoku is the one I use most. The majority of my prep work is done with this knife (slicing, chopping, etc.) It is very sturdy and has a good blade.
