Lighter in heft than its standard Classic counterpart, yet still beautifully balanced, this 10-inch slicing knife features an ultra-fine, ultra-sharp edge that shaves thin, uniform slices of meat off even the largest roasts with the perfection professionals expect. As most chefs know, longer blades produce thinner slices.Like all Classic knives, the slicing knife is precision forged from a single piece of high-carbon, stain-resistant steel. The blade has been impeccably ground, tapered, and polished, and its edge laser-tested for uniformity. After repeated use, the edge may be easily resharpened using a sharpening steel. Traditional in look, Classic Le Cordon Bleu knives are seamlessly constructed with a visible full tang triple-riveted into an ergonomically-shaped synthetic handle. Though the knife is dishwasher-safe, Wusthof recommends hand-washing all fine cutlery.
