stay away from the Emerilware line: Thin, flexible, and sharp, but a bit too thin and flexible. Not very resilient. Bends easily. Does not hold a sharp edge. Tip bent badly under minimal pressure and snapped off when I tried to straighten it. (I wasn't trying to open a tin can with it or asking it to do anything it shouldn't have done -- just trimming out a ham.) I bought several "better" knives, rather than a new set, trying to get a feel for what brands or lines I'd prefer. The Wüsthof name carries some reputation, but if this knife is...
